There is much debate about eating carbs. Are they good or are they bad? I consider them neither. Everything in moderation! Being on a vegetarian diet I at times indulge in a lot of carbs. Also, how easy is toast when you have busy morning? I am a huge fan of mushroom on my toast

My family loves to munch on toast and chai in the morning. This is very common on my husband’s side as well. Something about a warm breakfast that starts the day off on a great note.

How many of you take the time to plan breakfast? I never used to prior to the pandemic unless it was the weekend. Nowadays I am embracing being home by utilizing my kitchen as much as possible. Has staying at home during the pandemic changed your morning routine? Do you take the time to eat breakfast? Do you like mushrooms for breakfast?

I do also love a good sandwich. Aren’t these loaded toasts just a version of an open faced sandwich?

Also in my family we have folks not fond of mushrooms. You can place with asparagus, broccoli, red peppers, eggplant, and zucchini. One thing to also note, this toast is great warm or cold. As much as I love a warm breakfast I also like something I can make in advance. You can take this to go or even pack it for lunch.

  1. Prep Your Toast

    The steps to put this together are super easy and simple. Given all of the items are store bought, it is just a matter of putting it together and cooking the mushrooms. You are also welcome to eat the mushrooms raw. 

    • Start with mixing the equal portions of ricotta and garlic dip. You can add any seasoning you like here or when you are done.
    • Toast your bread
    • Do a quick sauté of your mushrooms it should take only a few minutes if your pan is hot.
    • Spread the mixture on the toast, lay the mushrooms next. Season to taste.

    Every cooking adventure starts with a trip to the store. I love to have Trader Joe's Garlic Spread and Dip handy at all times. It tastes good on everything!

    This is when you slice up your mushrooms. I recommend a quick sauté until brown. You can however also eat them raw.

    For seasoning - I like to use oregano, iItalian blend, onion powder, red crushed pepper, black pepper, and sea salt.
