Scallion Pancake

This is one of my new favorites. It is my go to when I am traveling and am not sure what is good. I am rarely disappointed by this one! It is really fun and easy to make at home. I cut out a lot of oil that comes in the restaurant.

Ingredients:

4-6 Scallions (Green Onions) chopped

1 cup of all purpose flour

1 teaspoon salt

1 tablespoon of vegetable oil for mixing

2 tablespoons of vegetable oil for coating

1/2 cup of water

Directions: Mix flour, salt, and oil. Once this is all mixed add the water.

Once everything is mixed knead for approximately 5 minutes until there is smooth dough ball.

Coat with a few drops of oil, spread it and cover. Let sit for 10 minutes.

Make fist size dough ball. Rub between palms in circular motion until smooth. Roll out into a square as thin as possible without breaking the dough. Then add some of the oil for coating (drops) and scallions. Roll square from one corner to the next until the dough is like a snake.

Then coil the snake into a ball and tuck the “tail” underneath.

Roll out and then put on a hot skillet. For my mountain high folks make sure it is SUPER hot.

Brush both sides with oil as desired. If you brush a few times it will get crispy.
