I love summer and the lighter meals that go with it. Who wants to eat a heavy meal when you are hot and sticky? This strawberry salad is refreshing and light – you will absolutely love it.
This salad is so fresh and a great blend of tastes. I love the strong taste of blue cheese and how it works with the strawberries. Even if I eat this salad in winter, it so reminds me of summer days where the breeze blows through my house and I have no cares in the world.
When I first put this salad together my husband said to me “Oh!”. He was not so sure about the flavors togethers. After trying it once, he now asks for it all the time. It is also a sneaky way to add fruit to your diet. If you don’t have strawberries handy you can use blueberries, blackberries, peaches, apricots, and plums.

Ingredients:
5 oz or 2 small heads of Spring Mix Greens
8-10 strawberries sliced lengthwise
12 crushed pecans
4 -6oz of blue cheese
1 diced green onion
1 tablespoon of chives
Sprig of mint
Salad Dressing:
1/2 cup of olive oil
1 tablespoon of balsamic vinegar
teaspoon of sesame seeds
1/2 teaspoon of sugar
1/2 teaspoon of garlic salt
1/2 teaspoon of ginger powder or a dash of fresh ginger
Toss all ingredients together – then pour light salad dressing on top.
