Harissa Halloumi Mac and Cheese

Mac and cheese is a classic. I have never met anyone that doesn’t like it (ok I have -my dad). Other then that, I think its universal – pasta + cheese = overall happiness. It’s a comfort food that can be enjoyed any day of the week. Rain, shine, or snow it is an amazing meal. Dress up your mac and cheese with this recipe. Let me know what you think!

Ingredients:

2 cups full fat milk or cream

2 cups cheddar cheese

1/4 cup of all purpose flour

1/2 stick of butter

1 box of pasta (any shape you like)

Per taste Harissa

1 small package of Halloumi

8 cherry tomatoes

Optional: green olives

Cooking and Assembly Instructions:

  1. Grill the halloumi first. Cut into strips and then shallow fry with a light amount of olive oil. Should take 2 minutes on low to medium heat on each side. Once these are brown set aside.
  2. Boil pasta per directions on box. Drain pasta.
  3. After the pasta has drained the sauce is super quick. Melt the butter in a sauce pan over low heat once it is melted (be careful not to burn) then add flour and milk. Wisk until smooth and then add cheese. Stir constantly for 5 minutes until the mixture is bubbling and smooth.
  4. Pour cheese over pasta – garnish with halloumi, tomatoes, and harissa.
