Chickpea Salad Sandwich

This post is not only a recipe but an ode to chickpeas. So filling and versatile. It is easy to buy a few cans and keep them in your pantry – we usually have something with chickpeas on a weekly basis. When we want to make quickie sandwiches this is what we do! No cooking required.

This salad is sometimes called Vegan Tuna – similar ingredients go into it. When you are looking for something filling and easy you probably already have all the ingredients.

Ingredients:

For chickepea mash filling

1 can of chickpeas

1 tablespoon of mayo or vegan mayo

1 tablespoon of dijon mustard

pinch of pepper

pinch of old bay seasoning ( if you do not have salt is fine)

1/4 of a red or green pepper

1/4 small red onion

1/4 cup shredded carrots

For sandwich

2 leaves of lettuce

1 table spoon of hummus

2 slices of whole wheat bread

sliced onion

sliced tomato

sliced cucumber

Assembly

1) Open the can of chickpeas and remove liquid. Do a quick rinse and pat dry.

2) Mash up the chickpeas and stir in ingredients .Let sit for 1 hour

3) Take sandwich ingredients and layer on as desired. I prefer to toast my bread.
